Their air-dried salamis and hams are slowly cured in the natural air-flow of their on-farm curing facilities. Their salamis are made in natural casings with their own sea-salt based cure. They don’t use flavour enhancers, cure accelerators, pre-mixes, or artifical emulsifiers. This not only makes the British charcuterie great, it also makes it lactose and gluten-free.

The clue to their ethics is in the grass-fed, organic, and free-range references above. The cattle and sheep are Pasture Fed for Life, which means they eat a diet that is natural to them and are not fattened up on grains. The pigs are genuinely free-ranging and allowed to forage.
No pesticides, herbicides or petro-chemical fertilisers are used and biodiversity on the farm is encouraged.
Peelham Farm sells veal from bulls from The Ethical Dairy, which is pioneering a new system of dairy farming – one that keeps the cows and their calves together for five months before weaning them, rather than separating them at just days old.
