The bounty of our seas is not endless., so when it comes to seafood, the easiest way to find out wether the fish is fresh and sustainable is to look on the label for country of origin, and following the general rules laid out in these pages.

Of course, there are exceptions to every rule, so ask your local fishmonger for their advice and, if you’re in a restaurant, your waiter where the seafood is from. They should know if it’s sustainably sourced, and if they don’t, there could be something fishy going on.
